The effect of food operations sustainability on food operations efficiency: The mediation role of food waste management in five-star hotels in Greater Cairo

Abstract

The aim of this research is to investigate the relationships among food operations sustainability, food waste management, and food operations efficiency. Therefore, the research methodology is analytical, the population of this research is the staff of five-star hotels in the greater Cairo area, and the sample is random stratified. As a result, the researcher obtained information from 564 participants from the food and beverage department. The data was analyzed by the researcher using structural equation modeling (SEM) with the SmartPLS 4.1.0.0 software. The findings of this research revealed that there is a high positive correlation between food waste management (FWM) and food operations efficiency (FOE); a moderate positive correlation between food operations sustainability (FOS) and food waste management (FWM); and a moderate positive correlation between FOS and FOE. Furthermore, the findings showed that the relationship between food operations sustainability and food operations efficiency is not moderated by food waste management. Lastly, hospitality managers should implement best practices of sustainable food operations to improve food waste management and food operations efficiency.
